I love savoury muffins, much more than the sweet kind. Savoury muffins make a great snack, a good meal with a side salad and work well in a lunchbox where 10 seconds in a microwave will revive them, making them great for taking to work.

Here we go again…the zucchini are back! It is a summer ritual for me to complain about drowning in zucchini. This year they have arrived earlier than usual, so I suspect it is going to be a bumper crop. I have planted a ridged Italian variety

My standby recipe for stuffed zucchini has always been with a tomato sauce, thickened with oats and topped with cheese, but I’ve branched out with this one and decided to go for a more Middle Eastern/Sicilian flavour. These are a teeny bit more labour intensive

I’ve been making zucchini patties for the last few years as a way of using up my excess zucchini, but the recipe I’ve been using up until last summer (when I was vegetarian, not vegan) has both eggs and feta cheese in it. But I
