eat all the smith & deli sandwiches – #21, tim curried egg salad
This is a classic time travelling sandwich, nothing fancy, great in its simple elegance, and not tricked up with extraneous ingredients. It really transports me to another time, in my case to my childhood and my Nanna’s curried egg sandwich. The egg sandwich has survived as a classic with good reason. This vegan rendition is almost indistinguishable from the real thing for those of us who miss it.
So as not to double up, I decided i was going to skip the plain egg salad sandwich and move straight to the curried one because that’s how my Nanna used to make egg sandwiches for us when we were kids.
I decided to have it on turkish bread because I love it. This is not at all Nanna Approved™, it would have been on crappy square white sliced back in those days, but I’ve moved on from white sliced even if Nanna probably wouldn’t have. She’d be 110 next year if she were still about.
This is a perfect vegan egg, curry and mayo combination with crunchy iceberg lettuce.
I loved it. A trip down memory lane.
