white bean and asparagus salad with citrus miso dressing

I had this salad for lunch today. It was delicious and took all of 5 minutes to make.

To be honest it is really not about the vegetables, it is all about the dressing. I think you could put just about any vegetable, grain or pulse with it and it would be wonderful.

The dressing comes from my friend Susan who tinkered with it after finding it on 101 Cookbooks (one of my favourite food blogs) where it featured in a squash and tofu dish. Susan used her dressing with sweet potato, rocket and pistachios.

The dressing is not as sweet as the original which had molasses in it as well.

The miso/citrus/sesame/soy flavours are a wonderful combination.

Luckily, it makes about three quarters of a cup and I can use it on a few other vegetables. Next stop grilled zucchini, green beans and pumpkin.

ingredients
  • 2 tbs sesame oil
  • 2 tbs maple syrup
  • 1 heaped tbs white miso
  • 1 tsp soy
  • zest and juice of one orange
  • juice of one small lemon (or half a large lemon)
instructions
  1. Mix together with a whisk. If you prefer a thinner consistency, thin with with extra citrus or water.
