  • 2 cups plain flour (I used unbleached white)
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ½ tablespoon sugar
  • 2 tablespoons oil (I used olive oil)
  • 1 cup soy milk
  • 2 tablespoons non dairy yoghurt (I used some coconut yoghurt)
  1. Preheat the oven to 220°C / 425°F
  2. Mix the flour, baking powder, salt and sugar in a bowl
  3. Mix the soy milk, oil and yoghurt together in another bowl
  4. Pour the oil mix into the flour mix and stir until barely combined. DO NOT OVERWORK.
  5. Tip onto a floured bench top and pat out until about ¾ inch thick. DO NOT KNEAD.
  6. Cut into 9 pieces and place on a tray.
  7. Cook in a 220°C / 425°F oven for 15 minutes or until nicely golden.
It is really important not to overwork or knead the scone dough - unless you like your scones tough.
