- 2 cups plain flour (I used unbleached white)
- 4 teaspoons baking powder
- ½ teaspoon salt
- ½ tablespoon sugar
- 2 tablespoons oil (I used olive oil)
- 1 cup soy milk
- 2 tablespoons non dairy yoghurt (I used some coconut yoghurt)
- Preheat the oven to 220°C / 425°F
- Mix the flour, baking powder, salt and sugar in a bowl
- Mix the soy milk, oil and yoghurt together in another bowl
- Pour the oil mix into the flour mix and stir until barely combined. DO NOT OVERWORK.
- Tip onto a floured bench top and pat out until about ¾ inch thick. DO NOT KNEAD.
- Cut into 9 pieces and place on a tray.
- Cook in a 220°C / 425°F oven for 15 minutes or until nicely golden.
It is really important not to overwork or knead the scone dough - unless you like your scones tough.
