  • 3 medium potatoes unpeeled
  • ½ bunch kale
  • 3 spring onions
  • 2 large pinches of salt
  • 1 tbs oil
  1. Heat the oil in a large frying pan until smoking hot, then turn down the heat down low.
  2. Grate everything coarsely in the food processor
  3. Season with salt to taste
  4. Scoop spoonfuls of the mix into the pan
  5. Cook for 5-10 minutes over low heat
  6. Flip and cook the other side for 5-10 minutes
It is important to cook the latkes over a low heat so that the insides are cooked before the outside burns.
