green beans with tomato, onion, garlic and cumin

- 1 tablespoon olive oil
- 2 large onions halved and sliced
- 2 cloves garlic crushed
- 2 teaspoons ground cumin
- 1 400gram can of tomatoes or equivalent fresh coarsely chopped
- 350 grams green beans topped and tailed
- 400ml water
- salt
- In a large deep pan fry the onions in the oil until softened and starting to colour slightly
- Add the garlic and cook for a minute
- Add the cumin and cook for 30 seconds
- Add the chopped tomatoes to the pan along with the beans, salt and about 400ml of water
- Cover, bring to the boil and reduce to a simmer and cook for an hour. Check, stir and add water occasionally if needed.
- The beans should end up soft, with a sauce that is a thick liquid.
- Adjust seasoning and serve.
