  • 1 tablespoon olive oil
  • 2 large onions halved and sliced
  • 2 cloves garlic crushed
  • 2 teaspoons ground cumin
  • 1 400gram can of tomatoes or equivalent fresh coarsely chopped
  • 350 grams green beans topped and tailed
  • 400ml water
  • salt
  1. In a large deep pan fry the onions in the oil until softened and starting to colour slightly
  2. Add the garlic and cook for a minute
  3. Add the cumin and cook for 30 seconds
  4. Add the chopped tomatoes to the pan along with the beans, salt and about 400ml of water
  5. Cover, bring to the boil and reduce to a simmer and cook for an hour. Check, stir and add water occasionally if needed.
  6. The beans should end up soft, with a sauce that is a thick liquid.
  7. Adjust seasoning and serve.
